| Since Jen had said something about liking the idea of my Mediterranean chicken recipe, I thought I'd go ahead and post it up here, because I believe in sharing a good thing. The recipe itself is based on one I found online somewhere (I think it was allrecipes or something), but I've taken a few liberties and added some stuff to it: Marinade: 3/4 cup balsamic vinegar 3 Tbs lemon juice 1 Tbs chopped fresh oregano 1/2 tsp ground black pepper 1 tsp (or so) chopped fresh thyme a pinch or two of ground clove Slice up 3 or 4 boneless, skinless chicken breasts into long slices, and marinate them in a plastic bag for at LEAST an hour - overnight is even better. Heat up some olive oil in a large skillet, and brown some garlic. Then add the chicken. Try to avoid pouring in the marinade as well. Cook chicken until it's done. Serve over yellow rice with cucumber sauce. Here's the recipe for the cucumber sauce: 1 cup plain, nonfat yogurt 1 medium cucumber, peeled, and finely chopped. Make sure you scoop out all the seeds and stuff first. 1 tbs lemon juice 1/2 tsp salt 1-2 cloves of minced garlic 1 tsp olive oil If you like olives, you can add those in as well. I hate them, so I don't. Also, a little pinch of paprika can give it a little bit of a kick too! Enjoy! 1 tsp (or so) chopped fresh oregano | ||||||||||||||||||||

| No problem, Jen! Oh, I do notice one mistake I made on there, other than randomly putting the last ingredient to the cucumber sauce at the very BOTTOM of my post. only do a teaspoon of lemon juice. Not a tablespoon. My bad. I hope you enjoy it! It's really easy to do! Dave - Too bad about the cucumber thing. It's pretty good without the sauce too, though. Off the top of my head, I suppose you could try a yogurt mint sauce or something if you really wanted...I've never tried that with the chicken though. | ||||||||||||||||||||
